Ingredients
- 1 ea. Large potato, peeled and diced
- 1 Tbs. Olive oil
- 3 ea. Garlic cloves, minced
- 3 oz. Red bell peppers, julienne
- 3 oz. Green bell pepper, julienne
- 3 oz. Red onion, julienne
- 16 oz. MorningStar Farms® Veggie Chorizo Crumbles
- 2 ea. Eggs
- to taste Kosher salt
- to taste Black pepper, ground
- 1 ea. Tostada
- 1/2 ea. Avocado, smashed
- 1 tsp. Queso cotija
Recipe Directions
1. In large skillet on medium heat place the potatoes and olive oil and cook until potatoes are golden brown, about 4 minutes.2. Add the garlic, peppers, and onions and cook until the garlic is translucent, about 1 minute.
3. Add the chorizo and cook all together until fully incorporated and the veggies are soft. Once all is cook set aside to serve.
4. In a non-stick pan cook the eggs to your desire style and season with salt and pepper, if desired. Set aside to assemble your dish.
5. To serve: On the center of a flat plate place 8 oz. of chorizo hash, top with tostada. Place the eggs on top of tostada. Next place the avocado on top of eggs and sprinkle the queso cotija. Garnish with your preferred greens.
