Creamy Bulgur and Succotash with MorningStar Farms® Veggie Chorizo Crumbles

Ingredients

  • 1 cup Bulgur
  • 2 cups Vegetable stock
  • 1 cup Heavy cream
  • 3 Tbs. Butter
  • ½ cup Parmesan, grated
  • ½ cup Corn
  • ½ cup Peas
  • ¼ cup Onion, diced
  • ¼ cup Bell pepper, diced
  • 1 Tbs. Garlic, minced
  • 2 cups MorningStar Farms® Veggie Chorizo Crumbles
  • ¼ cup Parsley, chopped
  • ¼ cup Scallions
  • 3 ea. Eggs

Recipe Directions

1. Cook bulgur with vegetable stock, cream and butter for 20-30 min or until tender. Then stir in parmesan cheese.
2. Saute corn, peas, onion, bell pepper, and garlic. Add MorningStar Farms® Veggie Chorizo Crumbles and herbs.
3. Poach egg in water for 6 min.
4. To serve: Place bulgur mixture in a bowl with the egg on top.
