Chorizo, Farro, Avocado and Poached Egg Bowl

Products Used: MorningStar Farms® Chorizo Crumbles

Ingredients

  • 4 oz. Mixed green lettuce, chopped
  • to taste Kosher salt
  • to taste Black pepper, ground
  • 2 oz. Sun dried tomato vinaigrette
  • 3 oz. MorningStar Farms® Veggie Chorizo Crumbles
  • 2 oz. Asparagus, cooked
  • 2 oz. Cherry tomatoes, halved
  • 2 oz. Farro, cooked
  • 2 oz. Green peas
  • 1 oz. Crispy battered onions
  • 1 ea. Egg, poached
  • ½ ea. Avocado, sliced

Recipe Directions

1. In a mixing bowl place the greens and season with salt and pepper, add the vinaigrette and toss around to ensure that the greens are all coated with the vinaigrette.
2. Place the dressed green in a deep salad bowl, forming lines start at the center with the chorizo, then asparagus, and tomatoes to one side, to the other side of the Chorizo.
3. Add the farro, green peas and crispy onions.
4. Garnish with a poached egg and sliced avocado.
