Ingredients
- 3 Tbs. Vegetable or other oil
- ¾ cup Potatoes O’Brien, frozen
- ½ cup MorningStar Farms® Chorizo Crumbles
- ¼ cup Quinoa, cooked
- 1 Tbs. Hummus
- ½ ea. (approx. ¼ cup) Small avocado, sliced
- ½ ea. (approx. ¼ cup) Persimmon, sliced
- ¼ cup Chickpeas, canned
- 1 Tbs. Scallion, sliced
- 1 Tbs. Pomegranate seeds
- 1 ea. Egg
- to season Kosher salt
- 1 Tbs. Salsa verde
- 1 Tbs. Harissa
- for garnish Cilantro leaves
Recipe Directions
1. Add oil to hot skillet/pan over medium-high heat.2. Add Potatoes O’Brien, and sauté until heated and slightly browned.
3. Add MorningStar Farms® Chorizo Crumbles, cook until heated through.
4. Remove mixture from pan and transfer into bowl.
5. Sprinkle quinoa over mixture.
6. Add hummus to middle of bowl.
7. Place sliced avocado on one side, and sliced persimmon on the other.
8. Add chickpeas.
9. Sprinkle scallions and pomegranate seeds.
10. Add oil to pan, add egg, cook sunnyside up, season with salt. Add to top of bowl.
11. Drizzle salsa verde and harissa.
12. Garnish with cilantro leaves.
