Creamy Butternut Squash Pasta with MorningStar Farms® Plant-Based Chorizo Crumbles

Ingredients

  • 12 oz MorningStar Farms® Plant-Based Chorizo Crumbles™
  • 14 oz Linguine pasta
  • ¼ cup Vegetable Oil
  • to taste Salt and pepper
  • to garnish Vegan Parmesan Cheese
  • as needed Creamy Butternut Squash sauce

Creamy Butternut Squash sauce

  • Approx. 3 cups Butternut Squash, diced
  • 2 Shallots
  • 1 handful Fresh Sage leaves
  • ½ cup Vegetable Stock
  • ½ cup Whole Cashews, raw
  • 1 ½ cups Almond (or soy) Milk, unsweetened
  • ¼ cup Nutritional Yeast

Recipe Directions

1. Preheat oven to 400° F.

2. For the Butternut Squash: Peel butternut squash, remove seeds and dice into 1inch cubes.

3. Cut shallots in half, lengthwise, and remove skin.

4. Place shallots, butternut squash and sage leaves on to a baking sheet. Generously drizzle with vegetable oil, season with salt and pepper, and mix well. Place in oven for 25-30 minutes.

5. For the Chorizo Crumbles: In a saute pan, on medium heat, add 1 Tbsp of vegetable oil. Then add the MorningStar Farms® Plant-Based Chorizo Crumbles™ and cook until heated through to 165°F, and crispy on the exterior.

6. For the Creamy Butternut Squash Sauce: Once the butternut squash is starting to brown and caramelize and is softened, remove from the oven. Place the squash in a blender with the vegetable stock and puree.

7. Transfer to a sauce pan on medium-low heat with 1 cup of almond (or soy) milk. Place the remaining half cup of almond milk in the blender with the cashews and puree until creamy.

8. Add the cashew cream to the sauce pan along with the nutritional yeast and stir. Allow sauce to warm while you cook the pasta.

9. For the Pasta: Cook the linguine in salted boiling water for 9 minutes, or until al dente. Reserve ¼ cup of pasta water, then drain the pasta.

10. Add the pasta water to the sauce, mix, then add the linguine and stir to coat pasta.

11. To serve: Divide pasta amongst 4 plates, top each evenly with the MorningStar Farms® Plant-Based Chorizo Crumbles™ and garnish with some vegan parmesan cheese.
