MorningStar Farms® Chorizo Breakfast Tacos

With serrano salsa.

Products Used: MorningStar Farms® Chorizo Crumbles
Servings: 8 tacos


Serrano Salsa

  • 1 lb. Tomatoes, roughly chopped
  • 4 oz. Serrano peppers, de-stemmed
  • ¼ cup White vinegar
  • 1 Tbs. Salt
  • ½ cup MorningStar Farms® Chorizo Crumbles
  • 12 ea. Eggs, whole
  • to taste Salt and pepper
  • 8 ea. Tortillas, flour
  • as needed Serrano salsa
  • ½ cup Oaxaca cheese (or Mozzarella), shredded
  • 3 Tbs. Red bell pepper, finely minced
  • as needed Cilantro leaves

Recipe Directions

1. For Serrano Salsa: Heat tomatoes, Serrano peppers, vinegar, and salt in a small pot over medium heat. Cover and cook until tomatoes soften and serrano peppers darken in color, about 10 minutes. Puree in blender until smooth. Set aside.
2. Heat a nonstick skillet over medium high heat and add MorningStar Farms® Chorizo Crumbles. Cook until heated through, 2-3 minutes.
3. Add eggs and continue stirring. Cook until eggs are set. Add salt and pepper to taste.
4. Warm tortillas. In each warmed tortilla, add about 1/3 cup of egg and chorizo mixture.
5. Add Serrano salsa as desired. Top with shredded Oaxaca cheese (or Mozzarella) red bell pepper, and cilantro.
