Ingredients
- 50 Whole Grain Flour Tortillas, 8-inch
- 5 lb Eggs, liquid whole, thawed
- 25, 2.25 oz Low Sodium Hash Brown Patties
- 25 oz MorningStar Farms® Vegan Sausage Style Crumbles, #28989-10230
- 12.5 oz Cheese, Cheddar, Yellow, Reduced Fat, Shredded, Chilled
Recipe Directions
1. Wrap tortillas in plastic wrap or foil and place in warmer to soften.2. Prepare scrambled eggs according to instruction.
3. Prepare hash browns according to instruction.
4. Place frozen crumbles from one pouch in skillet.
5. Cover skillet with a lid.
6. Heat at MEDIUM-HIGH for 3-4 minutes. Stir occasionally.
7. Remove lid. Heat an additional 4-5 minutes, stirring constantly.
8. Simmer to desired consistency, stirring constantly.
BURRITO ASSEMBLY
1. Lay softened whole-grain tortillas on work surface.
2. Using #16 scoop, place ¼ cup of egg mixture in center of each tortilla. Place 1 Tbsp. shredded cheese over eggs. Place 1 Tbsp sausage crumble over cheese. Place hash brown on top.
3. Fold in tortilla on each side, then roll burrito over top edge of tortilla. Wrap each burrito in deli paper and hold in warmer until ready to serve.
