Ingredients
- 11.5 lbs. Frozen eggs, thawed
- 12.11 lbs. (5.5kg) MorningStar Farms® Sausage Style Crumbles CN label
- 200 each Whole grain flour tortillas, 6"
- 8.3 cups General Tso’s sauce, prepared
- 28 cups (1 gal. 3 qt.) Romaine lettuce, chopped or shredded
- 28 cups (1 gal. 3 qt.) Tomatoes, diced
Recipe Directions
1. Preheat oven to 350° F.2. Scramble eggs.
3. Combine crumbles and eggs and mix well.
4. Divide evenly between 2" deep hotel pans. Bake at 350° F for about 30 minutes or until internal temperature reaches 165° F.
5. Fill two tortillas each with 1/3 c. (#12 scoop) of crumbles mixture.
6. Drizzle 2 tsp. of General Tso’s sauce over each taco and top each with 1/8 c. lettuce and 1/8 c. diced tomatoes.
