Servings: 100 enchiladas
Ingredients
- 12.11 lbs. (5.5 kg) MorningStar Farms® Sausage Style Crumbles CN label
- 26 cups (1 gal., 2 qt., 2 cups) Enchilada sauce, prepared
- 100 each Tortilla, whole grain, 8” (44g)
- 6.25 lbs. Cheddar Cheese, low fat, shredded
Recipe Directions
1. Preheat oven to 350° F.2. Mix crumbles and 6 cups of enchilada sauce together.
3. Spread ½ cup of crumbles on each tortilla and roll up.
4. Spread a thin layer of enchilada sauce in bottom of the 2” deep pans and place enchiladas seam side down in pans.
5. Cover enchiladas with remaining enchilada sauce and top with cheese.
6. Bake at 350° F for 30 minutes until sauce bubbles and cheese is melted.
