K-12 Jollof Rice with Morningstar Farms® Sausage Style Crumbles

Ingredients
- 5 pounds Medium tomatoes, roughly chopped and seeded
- 3 ea Habanero peppers, fresh, stem removed (or 1 jalapeño)
- 1 pound Large bell peppers, stemmed, seeded and rough chopped
- 2 pounds Medium onions, peeled and roughly chopped
- 1 ½ cup Vegetable oil
- 1/4 cup Curry powder
- 1/4 cup Garlic powder
- 1/2 cup Onion powder
- 15 ea Bay Leaves
- 1/4 cup Ginger, ground
- 1/2 cup Thyme, dried
- 6 cups Medium grain brown rice
- 12 cups Morningstar Farms® Vegan Sausage Style Crumbles
Recipe Directions
1. Preheat oven to 350° F.2. Blend together the tomatoes, habanero, bell pepper, and onions and purée until smooth. Make sure everything is blended, set aside.
3. Heat the vegetable oil in a large pot until warmed. Add the vegetable purée, along with the salt, curry powder, garlic powder, onion powder, bay leaves, ginger, and thyme. Bring the mix to a boil.
4.Mix the rice and Morningstar Farms® crumbles very well in the 2” hotel pan. Spread out evenly.
5. Pour the hot liquid into the rice and stir well. Make sure everything is coated with the liquid. Cover with plastic and foil and tightly crimp to seal.
6. Bake the pan at 350° F for 40-45 minutes, keeping tightly covered. Cook to internal temperature of 165° F.
7. Hold outside of temperature danger zone until service.
