Santa Fe Breakfast Frittata

Ingredients
- 3/4 cups (12 ounces) vegetable oil
- 36 each (3 pounds) Morningstar Farms® Veggie Breakfast Sausage Patties Original
- 1 pint 1/4 cup (12 ounces) red peppers, fresh, julienned
- 1 pint 1/4 cup (12 ounces) green peppers, fresh, julienned
- 1 pint 3/4 cup (1 pound 8 ounces) black beans (canned), drained, rinsed
- 72 each eggs, large
- 1 pint 1 cup (24 fl. ounces) heavy cream
- 1 pint 1 cup (12 ounces) Monterey jack cheese, shredded
- 1 pint 1 cup (12 ounces) pepper jack cheese, shredded
- 1 1/2 cups (12 fl. ounces) sour cream
- 4 each avocados, fresh, pitted, diced
- 24 each lime wedges
- 1 1/2 cups (12 fl. ounces) tomato salsa
- 1 1/2 cups (6 ounces) green onions, fresh, bias-cut
Recipe Directions
1. In a 6-inch, non-stick sauté pan, combine and cook oil, Morningstar Farms® Veggie Breakfast Sausage Patties, peppers and black beans for 4 minutes.2. Whisk together eggs and heavy cream.
3. Pour egg mixture over sausage mixture. Sprinkle cheese on top.
4. Place under broiler. Cook for 4 minutes.
5. Remove from pan and garnish with sour cream, avocado, lime wedge, salsa and green onions.
