Kellogg's® Scrambled Eggs Santa Fe

Ingredients

  • 50 each eggs, beaten, large
  • 4 quarts 1 2/3 cups (14 fl ounces) fat free milk
  • 1 tablespoon salt
  • 1 1/2 teaspoons pepper
  • 50 each (4 pounds 4 ounces) Morningstar Farms® Veggie Breakfast Sausage Patties
  • 50 each English muffins, split and toasted
  • Optional Garnish: 6 cups chunky salsa

Recipe Directions

1. In medium bowl beat together eggs, milk, salt, and pepper. In nonstick skillet generously coated with cooking spray, cook egg mixture over medium heat, without stirring, until egg mixture begins to set on bottom and sides.
2. Use spatula to lift and fold eggs, so uncooked portion flows underneath. Continue cooking over medium heat for 2-3 minutes or until set.
3. Prepare Morningstar Farms® Veggie Sausage Patties according to package directions.
4. Evenly portion eggs over 6 of the toasted English muffin halves.
5. Place Morningstar Farms® Veggie Sausage Patties over eggs and spoon salsa over top.
6. Serve hot with remaining English muffin halves.
