  • 48 each eggs, large
  • 1 3/4 cups (12 ounces) button mushrooms, sliced
  • 2 1/2 each (12 ounces) red peppers, fresh, chopped
  • 2 1/2 each (12 ounces ) green peppers, fresh, chopped
  • 1 cup (6 ounces) green onion, fresh, chopped
  • 1 1/2 cups (12 ounces) cheddar cheese, shredded
  • 1 1/2 cups (12 ounces) Monterey jack cheese, shredded
  • 1/2 cup and 2 tablespoons Southwest seasoning
  • 24 12-inch flour tortillas
  • Jalapeno-White Cheddar Country Gravy: (KICRecipeIngredient-74669)
  • 24 each (32 ounces) Morningstar Farms® Veggie Breakfast Sausage Patties,
  • 1/4 cup (2 fl. ounces) vegetable oil
  • 1/4 cup (1/2 ounce) fresh jalapeno, minced
  • 1/4 cup Southwest seasoning
  • 1/2 cup flour
  • 2 quarts (64 fl. ounces) milk
  • 2 cups (8 ounces) white cheddar cheese, shredded
  • salt and pepper to taste

Recipe Directions

Spicy Southwest Breakfast Omelet Egg Rolls:
1. Combine Morningstar Farms® Veggie Breakfast Sausage Patties, eggs, mushrooms, peppers, onions and cheeses. Season mixture with Southwest seasoning.
2. Place 4 ounces of mixture in center of tortilla.
3. Fold sides over and roll into burrito.
4. Secure ends with toothpicks.
5. Deep fry at 350ºF for 4 to 6 minutes.
6. Cut burrito on a 45-degree angle.
7. Serve with 2 ounce jalapeno-white cheddar country gravy.

Jalapeno-White Cheddar Country Gravy
:
1. Heat a large skillet over medium heat. Add the oil, jalapeno, Morningstar Farms® Veggie Breakfast Sausage Patties and seasoning to the pan. Cook for 3 to 4 minutes. Add flour and stir until flour is pale golden brown. About 3 minutes.
2. Add milk, whisking constantly to remove any lumps. Simmer over low heat, stirring frequently for 10 to 15 minutes.
3. Remove from heat, whisk in cheese until melted. Season with salt and pepper and serve.
