Open-Faced Breakfast Sandwich

Ingredients
- 25 large eggs
- 3 quarts skim milk
- 1 1/2 cups scallions,
- vegetable oil cooking spray
- 25 Morningstar Farms® Veggie Breakfast Sausage Patties - CN Label
- 3 quarts lite sour cream
- 100 1/2 ounces whole grain baguette slices,
Recipe Directions
1. Whisk eggs, milk, and scallions in large bowl until well blended.2. Coat a tilt skillet in cooking spray, add egg mixture and scramble quickly, cooking over medium heat for about 2 minutes.
3. Add Morningstar Farms® Veggie Breakfast Sausage Patties - CN Label and cook about 3 more minutes. Remove from heat and add sour cream and incorporate.
4. Arrange baguette slices on plates. Spoon scrambled eggs atop toasts and serve.
