Ingredients
- 24 ounces extra virgin olive oil,
- 8 pounds eggplant,
- 8 pounds spanish onions,
- 12 celery stalks,
- 4 pounds green bell peppers,
- 4 pounds red bell peppers,
- 1 cup garlic cloves,
- 8 pounds zucchini,
- 48 Gardenburger® Original Veggie Patties
- 16 pounds tomatoes,
- 12 pounds potatoes,
- 4 cups golden raisins
- 4 cups black olives,
- 4 quarts vegetable broth
- 1 tablespoon dried oregano
- 2 tablespoons curry powder
- 2 tablespoons turmeric
- salt and pepper,
- fresh parsley leaves,
Recipe Directions
1. In large, deep-sided skillet, heat 4 oz. olive oil over medium heat. Add eggplant, onions, and celery. Cook 3-5 minutes, stirring often until vegetables soften.2. Stir in peppers and garlic, and cook an additional 2-3 minutes, stirring often.
3. Add zucchini, Gardenburger® Original Veggie Patties, and remaining oil.
4. Add tomatoes, potatoes, raisins, olives, broth, oregano, curry powder, turmeric, salt, and pepper, stirring well to combine. Bring to brisk simmer over medium-high heat.
5. Reduce heat, cover, and simmer gently until all vegetables are tender, 20-25 minutes, stirring occasionally.
3. Garnish with parsley prior to serving. Serve hot.
