Cancun-Style Green Chile Tacos with Lime-Avocado-Ranch Sauce

Ingredients
- For Lime-Avocado-Ranch Sauce:
- 8 ounces fresh avocado,
- 8 ounces ranch dressing
- (about 1 ounce) juice of 1 lime
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- salt and freshly ground black pepper,
- For Tacos:
- 1 ounce vegetable oil,
- 10 ounces white onions,
- 5 large poblano chiles,
- salt,
- 1 ounce garlic,
- 2 1/2 ounces lime juice
- 10 Gardenburger® Original Veggie Patties
- 8 ounces pepper jack cheese,
- 7 ounces queso fresco,
- 30 5 inch round tortillas, flour or corn,
- 10 ounces iceberg lettuce,
- 10 ounces plum tomatoes,
- 5 ounces fresh cilantro leaves,
Recipe Directions
1. In food processor, combine avocado, ranch dressing, lime juice, cayenne pepper, and ground cumin. Pulse to combine. Season to taste with salt and pepper. Transfer to bowl and refrigerate.2. In skillet, sauté onions until golden and beginning to soften. Add poblano strips; season with salt.
3. Add garlic, sauté 30 seconds, and add lime juice. Simmer to reduce, then add Gardenburger® Original Burger strips; toss to combine. Cook Gardenburger® Original Burger strips according to package instructions. Keep warm.
3. Toss together pepper Jack cheese and queso fresco; set aside.
4. Fill thirty tortillas with about 3 oz. Gardenburger® Original Burger patty, poblano and onion mixture. Divide among the tacos 1 oz. lettuce, 1 oz. tomato, 1 1/2 oz. cheese mixture and 1/2 oz. cilantro. Drizzle each taco with about 1 Tbs. Lime-Avocado Ranch Sauce.
