Cajun-Style Green Chile Tacos with Lime-Avocado-Ranch Glaze

Ingredients

- 2 each (about 8 ounces) fresh avocado
- 1 cup (8 fl. ounces) ranch dressing
- 2 tablespoons (1 ounce) lime juice
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- salt and freshly ground black pepper, to taste

- 2 tablespoons (1 fl. ounce) vegetable oil,
- 2 1/2 each (10 ounces) white onions, chopped
- 1 cup or 5 each large poblano chiles, cut into strips
- salt to taste
- 9 cloves (1 ounce) garlic, minced
- 1/4 cup 1 tablespoon (2 1/2 ounces) lime juice
- 10 each (1 pound 8 ounces) Gardenburger® Original Veggie Patties, cut into strips
- 2 cups (8 ounces) pepper jack cheese, shredded
- 1 2/3 cups (7 ounces) queso fresco, crumbled
- 30 each 5 inch round tortillas, flour or corn
- 1/2 head (10 ounces) iceberg lettuce, shredded
- 4-5 each (10 ounces) plum tomatoes, chopped
- 5 ounces fresh cilantro leaves, chopped
Recipe Directions
1. In food processor, combine avocado, ranch dressing, lime juice, cayenne pepper, and ground cumin. Pulse to combine. Season to taste with salt and pepper. Transfer to bowl and refrigerate.2. In a skillet, sauté onions in oil until golden and beginning to soften. Add poblano strips; season with salt. Add garlic, sauté 30 seconds, and add lime juice.
3. When simmering, reduce and add Gardenburger® Original Veggie Patties strips. Toss to combine. Cook Gardenburger® Original Veggie Patties strips according to package instructions. Keep warm.
4. Toss together pepper Jack cheese and queso fresco; set aside.
5. Fill thirty tortillas with about 3 oz. Gardenburger® Original Veggie Patties, poblano, and onion mixture.
6. Divide among the tacos: 1 oz. lettuce, 1 oz. tomato, 1 1/2 oz. cheese mixture and 1/2 oz. cilantro. Drizzle each taco with about 1 Tbs. Lime-Avocado Ranch Sauce.
