Santa Fe Southwest Tostada Salad

Ingredients
- 1 avocado, sliced, divided
- 1/2 ounce fresh lime juice
- 1 1/2 ounces chipotle ranch dressing
- 1 Morningstar Farms Veggie Foods Morningstar Farms® Spicy Black Bean Veggi
- 1 1/2 ounces romaine lettuce, shredded
- 2 ounces corn, roasted
- 1 Roma tomato, 1/4 inch diced
- 1 ounce Pepper Jack cheese, shredded
- 1 ounce Cheddar cheese, shredded
- 3 corn tostadas
- 1 tablespoon roasted tomato salsa
- 1 tablespoon green onions, bias cut
Recipe Directions
Dressing:1. In medium mixing bowl, mash together half of the avocado, lime juice and chipotle ranch dressing. Refrigerate.
Assemble Salad:
1. Mix Morningstar Farms® Spicy Black Bean Burger, romaine lettuce, remaining avocado, corn, tomato and cheeses.
2. Layer tostada, 1/3 Morningstar Farms® Spicy Black Bean Burger mixture, repeating for three layers.
3. Garnish with roasted tomato salsa and green onions.
