Tomato Jam Veggie Slider

Tangy roasted tomato jam tops a MorningStar Farms® Spicy Black Bean Slider with provolone cheese and arugula on a slider bun.

  • 1 each Cinnamon stick, whole
  • 1/4 tsp Cumin, ground
  • 2 tbsp Lemon juice, fresh
  • 12 each Roma tomatoes, cored, cut medium dice
  • 1/4 tsp Salt
  • 1/2 cup Sugar, granulated
  • 1/2 cup Sugar, light brown
  • 1 each Vidalia onion, cut medium dice
  • 2 tbsp Vinegar, apple cider

Recipe Directions

1. Preheat oven to 350˚ F.
2. Heat MorningStar Farms® Spicy Black Bean Sliders in 350˚ F oven for 7-9 minutes, turning halfway through heating time. In the last 2 minutes of bake time, add cheese on top to melt.
2. Toast bun in 350˚ F oven for 3 minutes.
3. Place the heated black bean slider on the bottom half of the bun.
4. Top with tomato jam.
5. Garnish with arugula.
6. Add the top of the bun.
1. Place cinnamon stick, cumin, lemon juice, Roma tomatoes, salt, sugars, Vidalia onions, and apple cider vinegar in a medium saucepan and stir to combine. Bring to a boil over medium-high heat, about 5 minutes.
2. Reduce heat to low, and simmer so that only the center of the mixture is bubbling.
3. Cook, stirring occasionally, until mixture has thickened, 45-90 minutes. (When you scrape bottom of pan with a spoon, the line should hold and not run back into itself.)
4. Remove pan from heat. Let cool completely, and refrigerate in a container with a tight-fitting lid for up to 5 days.
