California Burger with Avocado and Tomato Relish

Ingredients
- 8 ounces sun-dried tomatoes,
- 2 tablespoons garlic cloves,
- 1 cup basil leaves
- 2 tablespoons fresh thyme leaves,
- 1 ounce extra virgin olive oil
- salt and pepper to taste
- 2 ripe avocados
- ½ ounce lime juice
- ¼ teaspoon TABASCO® sauce
- 12 Morningstar Farms® Spicy Black Bean Veggie Burgers
- 12 small - 4 inch x 4 inch focaccia
Recipe Directions
1. To make the tomato relish, put the tomatoes and garlic into a bowl. Roll basil leaves together into a cigar shape. Cut into thin strips. Mix the basil and thyme in with the tomatoes and garlic. Stir in olive oil to make a relish texture. Season with salt and pepper to taste. Set aside.2. To make the avocado butter, slice each avocado in half and remove the pit. Peel the avocado and put the flesh into a food processor. Add the lime juice and TABASCO® sauce. Season with salt and pepper, and process until smooth.
3. In sauté pan, cook Morningstar Farms® Spicy Black Bean Burgers for 3 to 4 minutes on each side.
4. Cut each focaccia in half horizontally, and spread with a layer of avocado butter.
5. Place Morningstar Farms® Spicy Black Bean Burgers on focaccia. Top Morningstar Farms® Spicy Black Bean Burgers evenly with tomato relish and the remaining focaccia and serve.
