Ingredients

  • 24 each (4 pounds 12 ounces) Gardenburger® Malibu Burger Organic Vegan
  • 3 quarts 1 pint (12 ounces) baby spinach, fresh
  • 1 pint (12 ounces) yellow onions, fresh, chopped
  • 1/2 cup (4 fl. ounces) vegetable oil
  • 1 pint 1 cup (12 ounces) dried cranberries
  • 1/2 cup (4 fl. ounces) grainy mustard
  • 24 each whole-grain buns
  • 48 slices (2 pounds 8 ounces) tomatoes, fresh, sliced

Recipe Directions

1. Cook Gardenburger® Malibu Burger patty according to directions.
2. Sauté spinach and onions in vegetable oil over high heat for 3 minutes, just until wilted.
3. Add cranberries to spinach mixture and toss to coat.
4. Spread mustard on bottom bun.
5. Place tomatoes on bottom bun, then place patty on top of tomatoes and top with spinach mixture and top bun.
