MorningStar Farms® Spicy Southwest Chik'n Salad

Ingredients

  • 120 ea. MorningStar Farms® Vegan Chik’n Buffalo Wings
  • 2 lbs. Brown rice, cooked
  • 8 cups Bell pepper, diced
  • 8 cups Black beans, canned, low-sodium, drained
  • 8 cups Corn, canned, low-sodium, drained
  • 2 cups Cilantro, fresh, chopped
  • to serve Ranch dressing, low-fat, low-sodium

Recipe Directions

1. Preheat oven to 375° F.
2. Place frozen wings on baking sheet and heat for 14-16 minutes. For crispier wings, turn wings over halfway through heating time. Cook to an internal temperature of 165° F or higher.
3. Allow wings to cool for 2-3 minutes.
4. Place 1 cup cooked rice in clamshell.
5. Place ½ cup romaine on top of rice.
6. Place 5 wings on top of rice.
7. Portion ½ cup of bell pepper, black beans and corn in piles on rice.
8. Add 2 Tbs. cilantro on top for color.
9. Serve with ranch dressing.
10. Hold outside of temperature danger zone until service.
