MorningStar Farms® Buffalo Chik'n Nachos

Ingredients

  • 600 ea. Tortilla rounds, whole grain
  • 15 ½ cups Black beans, cooked, drained well
  • 15 ½ cups Tomatoes, diced, canned, drained well
  • 6 cups Jalapeño slices
  • 3 ¾ cups Shredded mozzarella, part skim (or low sodium cheese sauce, 2oz. per meat equivalent)
  • 200 ea. Morningstar Farms® Vegan Buffalo Wings
  • 3 ½ cups Sour cream, in a cup (0.5 oz. ea.)
  • 6 ¼ cups Salsa, canned, in a cup (1 oz. ea.)

Recipe Directions

1. Preheat oven to 350º F.
2. Place about 13 chips in each 2 lb. paper boat; spread them out.
3. Top each tortilla boat with ¼ cup black beans, ¼ cup diced tomatoes, 6-7 jalapeño slices, and ¼ cup shredded mozzarella cheese. (Can substitute 2 oz. of low sodium processed cheese sauce for same equivalent.)
4. Place the filled paper boats onto sheet pans in a single layer.
5. Bake at 350º F for 15 minutes, until cheese is melted. Hold hot at 145º F or above.
6. Spread the Morningstar Farms® Vegan Buffalo Wings onto sheet pans and bake at 350º F for 14-16 minutes. They should be hot in the center. Hold hot at 145º F or above.
7. To serve, place 4 hot Morningstar Farms® Buffalo Wings into each prepared and heated tortilla boat. Serve with a side of sour cream (1 Tbs.) and salsa (2 Tbs.).
