MorningStar Farms® Buffalo Power Bowl

Ingredients
- 15 lbs. 12 oz. Brown rice, parboiled
- 11 qts. Water
- 4 ½ Tbs. Garlic, granulated
- 3 ea. Bay leaf
- 150 ea. Morningstar Farms® Vegan Buffalo Wings
- 6 ¼ cups Edamame beans, shelled, fresh
- 6 ¼ cups Carrots, peeled and shredded
- 6 ¼ cups Cucumber, diced small
- 6 ¼ cups Black beans, canned, drained and rinsed
- 3 ¼ cups Mild buffalo sauce, low-sodium
Recipe Directions
1. Preheat oven to 300º F.2. Rinse the brown rice under cold water.
3. Divide rice evenly into 3 hotel pans. Add 1/3 of the water, 1 ½ Tbs. granulated garlic and 1 bay leaf to each pan. Cover tightly.
4. Steam or bake at 300º F for 45-50 minutes until cooked through.
5. Allow to cool, fluff with a spoon.
6. While the rice cooks, tray up the wings in a single layer and bake at 350ºF for 14-16 minutes.
7. Allow the wings to cool, then slice each into 3-4 slices.
Bowl Assembly:
1. Scoop 1 cup of the brown rice into the bottom of a bowl.
2. Scoop 1 oz. edamame, 1 oz. carrots, 1 oz. cucumber and 1 oz. black beans on top of the rice in separate piles.
3. Scoop 2 oz. of the sliced Buffalo wings on top. Serve ½ oz. buffalo sauce on the side, per order.
4. Keep chilled and covered if storing before service, below 40º F.
