Maui MorningStar Farms® Chipotle Black Bean Burger

With Red Cabbage Slaw and Maui Sauce

Ingredients

  • 4 ea. MorningStar Farms® Chipotle Black Bean Burger
  • 4 each Brioche Buns, split
  • 4 rings Pineapple, peeled and sliced into ½” thick rings
  • as needed Red Cabbage Slaw
  • as needed Maui Sauce

Red Cabbage Slaw

  • 2 cups Red Cabbage, shredded
  • 1/3 cup Red Onion, peeled and sliced thinly
  • 4 Tbs. Apple Cider Vinegar
  • 2 Tbs. Soy Sauce
  • ½ tsp Ginger, ground, dry
  • 2 Tbs. Sugar, granulated

Maui Sauce

  • 1/3 cup Mayonnaise
  • 2 Tbs. Sweet Chili Sauce
  • ¼ tsp Cayenne, ground

Recipe Directions

1. For the Red Cabbage Slaw: Add all ingredients to a mixing bowl and toss together to combine. Allow to sit for at least 20 minutes before serving. Store well chilled until needed.

2. For the Maui Sauce: Combine the ingredients into a bowl and whisk to combine. Store well chilled until needed.

3. Roast the pineapple slices at 350°F for 20 minutes, should be browned and roasted, with some juices. Set aside in a warm place while the burgers cook.

4. For the Chipotle Black Bean Burger: Cook the MorningStar Farms® Chipotle Black Bean Burger at 350°F for 8-10 minutes, until hot in the center (160°F)

5. Toast the brioche buns and lay out on a plate, bottom side down.

6. To top: Top the roasted pineapple slice, and ½ cup of the red cabbage slaw onto the cooked MorningStar Farms® Chipotle Black Bean Burger,

7. Spread 2 Tbs. of the Maui sauce on the top bun and top the burger.

8. To serve: Serve hot.
