Ingredients
- 3/4 pound zucchini
- 4 each scallions
- 6 ounces Haloumi cheese
- 1/4 cup Keebler® Town House® Original Crackers
- 2 each eggs
- 1 tablespoon fresh dill
- salt
- freshly ground pepper
- 1/4 cup vegetable oil
- 1/3 cup plain yogurt
- 1 each lemon
- 1 tablespoon fresh dill sprigs for garnish
Recipe Directions
1. In a large bowl, combine zucchini, scallions, Haloumi, ground crackers, eggs, and dill. Season with salt and pepper to taste.2. Heat oil in a large skillet. Form fritters using heaping teaspoons of the zucchini mixture.
3. Cook in batches for 2 minutes on each side until fritters are golden and firm. Set aside to drain on toweling.
4. Top each fritter with 1/2 tsp. of yogurt, a piece of lemon, and a small sprig of dill. Serve immediately.
