Zucchini and Haloumi Fritters

Products Used: Town House® Original Crackers

  • 3/4 pound zucchini
  • 4 each scallions
  • 6 ounces Haloumi cheese
  • 1/4 cup Keebler® Town House® Original Crackers
  • 2 each eggs
  • 1 tablespoon fresh dill
  • salt
  • freshly ground pepper
  • 1/4 cup vegetable oil
  • 1/3 cup plain yogurt
  • 1 each lemon
  • 1 tablespoon fresh dill sprigs for garnish

Recipe Directions

1. In a large bowl, combine zucchini, scallions, Haloumi, ground crackers, eggs, and dill. Season with salt and pepper to taste.
2. Heat oil in a large skillet. Form fritters using heaping teaspoons of the zucchini mixture.
3. Cook in batches for 2 minutes on each side until fritters are golden and firm. Set aside to drain on toweling.
4. Top each fritter with 1/2 tsp. of yogurt, a piece of lemon, and a small sprig of dill. Serve immediately.
