Ingredients
- 12 (2.5 lbs) Morningstar Farms® Garden Veggie Patties™
- 6 ounces minced garlic cloves
- 8 ounces olive oil or vegetable oil
- 12 ounces drained and chopped sun-dried tomatoes packed in oil
- 10 ounces sliced pitted black olives
- 8 ounces sliced almonds
- 40 ounces reduced-sodium chicken broth or dry white wine
- 5 pounds hot cooked mini penne pasta or rotini pasta
- 3/4 cup chopped fresh Italian parsley or fresh parsley
Recipe Directions
1. Cook patties according to package directions. Cut into small dice.2. Meanwhile, in large shallow stockpot cook garlic in hot oil for 30 seconds. Stir in sun-dried tomatoes, olives, and almonds.
3. Cook and stir over medium heat for 2-3 minutes or until almonds begin to brown. Carefully add broth. Bring to a boil. Gently boil uncovered for 1-2 minutes or until most of the liquid evaporates.
4. Toss together pasta and tomato mixture. Place diced Morningstar Farms® Garden Veggie Patties on pasta and tomato mixture. Garnish with parsley and serve.
