Vegan Chik'n Wild Mushroom Soup

Ingredients
- 24 ounces fresh oyster mushrooms
- 15 ounces shiitake mushrooms
- 3 ounces vegetable oil
- 6 tablespoons garlic cloves,
- 4 ounces fresh ginger,
- 3 ounces sake
- 72 ounces vegetable stock
- 6 tablespoons cornstarch
- 3 ounces warm water
- 18 ounces Morningstar Farms® Meal Starters™ Chik'n Strips Vegan
- 12 ounces cooked wild rice
- 21 ounces straw mushrooms,
- salt to taste
- fresh ground pepper to taste
Recipe Directions
1. Remove and discard the stalks of the oyster and shiitake mushrooms. Slice each mushroom in half.2. Heat the oil in a large saucepan. Add the garlic, ginger and sliced mushrooms. Sauté over moderate heat for 5 minutes, or until the garlic and ginger are softened. Add the sake and stock and bring to a boil. Reduce the heat to a simmer.
3. In a bowl, mix the cornstarch with warm water to create a paste. Stir the paste into the soup. Continue stirring until the soup thickens. Once thickened, turn off heat and puree.
4. Cut Morningstar Farms® Meal Starters™ Chik'n Strips in large dice.
5. In a pan, sauté the Morningstar Farms® Meal Starters™ Chik'n Strips for about 4 to 5 minutes until slightly brown.
6. Garnish with straw mushrooms, Morningstar Farms® Meal Starters™ Chik'n Strips and rice. Add salt and pepper to taste.
