Tuscan-Style Vegan Pesto Pasta

  • 12 ounces red bell peppers,
  • 12 ounces yellow squash,
  • 24 ounces whole grape tomatoes
  • 3 tablespoons red pepper flakes
  • 18 ounces black olives,
  • 12 ounces zucchini,
  • 48 ounces Morningstar Farms® Meal Starters™ Chik'n Strips Vegan
  • 24 ounces vegetable broth
  • 24 ounces basil-pesto,
  • 96 ounces pasta of choice,
  • 12 ounces whole capers
  • salt and pepper to taste
  • 12 ounces whole capers

Recipe Directions

1. In a pan, sauté peppers, yellow squash, tomatoes, red pepper flakes, olives and zucchini.
2. In a separate pan, sauté Morningstar Farms® Meal Starters® Chik'n Strips until slightly brown.
3. Add broth and pesto to vegetables. Bring to a boil. Add cooked pasta and Morningstar Farms® Meal Starters® Chik'n Strips. Gently mix, cooking for 1 minute.
4. Remove from heat. Adjust with salt and pepper to taste.
5. Add capers and serve.
