Spicy Thai Vegan Burger

Ingredients
- 1 pint (8 ounces) carrots, julienned
- 1 pint 1 1/2 cups (12 ounces) spring onions, chopped
- 1 pint 1 cup (12 ounces) sugar snap peas, chopped
- 1 pint 1/4 cup (12 ounces) cherry tomatoes, sliced in half
- 3/4 cup (1 ounce) fresh Thai basil leaves, chopped
- 12 each red chili peppers
- 1 1/2 cups (12 ounces) coconut milk
- 3/4 cup (6 ounces) lime juice
- 1/4 cup (2 ounces) sesame oil
- salt and pepper to taste
- 24 each (3 pounds 12 ounces) Morningstar Farms® Grillers® Original
- 24 each focaccia rolls, sliced in half (any variety)
Recipe Directions
1. Mix carrots, onions, peas and tomatoes in a bowl. Roll basil leaves together into a cigar shape. Cut into thin strips and add to vegetables.2. To make dressing, combine and blend chili peppers, coconut milk, lime juice, sesame oil, and salt and pepper together into a sealed container. Shake until well blended. Toss dressing with vegetables.
3. In sauté pan, cook Morningstar Farms® Grillers® Vegan Burgers for 3-4 minutes on each side.
4. Place Morningstar Farms® Grillers® Vegan Burgers onto focaccia. Top evenly with vegetables.
5. Place with top half of focaccia and serve.
