Vegan Pasta Primavera

Ingredients
- 8 cups (72 ounces) pasta of choice, raw
- 2 quarts (64 ounces) soy milk
- 1 pound soy cheese, shredded
- 2 cups (3 ounces) fresh basil leaves,chopped
- 1 pint (10 ounces) sugar snap peas
- 1 quart (1 pound 6 ounces) grape tomatoes, sliced in half
- 4 each (1 pound 12 ounces) zucchinis, fresh, sliced
- 4 each (1 pound 12 ounces) yellow squash, fresh, sliced
- 4 each (10 ounces) carrots, julienned
- 24 each Morningstar Farms® Grillers® Vegan
- 1 teaspoon salt
- 1 teaspoon pepper
- 24 sprigs (3 ounces) basil
Recipe Directions
1. Bring a large sauce pan of water to a boil and cook the pasta according to instructions. Drain pasta and set aside.2. In a sauce pan, bring soy milk to a boil. Add soy cheese and chopped basil until fully combined, and cook about 6 minutes.
3. Add pasta, vegetables and Morningstar Farms® Veggie Grillers strips and cook until vegetables are done. About 3 minutes.
4. Remove from heat. Season with salt and pepper to taste.
5. Garnish with basil sprigs.
