Spicy Black Bean Rigatoni Casserole

Ingredients

  • 25 pounds Rigatoni
  • 12 1/2 pounds broccoli florets
  • 25 pounds MorningStar Farms® Spicy Black Bean Burgers
  • 6 1/4 quarts marinara sauce
  • 12 1/2 pounds frozen peas
  • 5 pounds grated parmesan cheese
  • 3 cups dried oregano
  • salt and freshly ground black pepper, to taste

Recipe Directions

1. Preheat oven to 350° F.
2. Cook rigatoni in salted, boiling water for 8-10 minutes, until al dente. Shock in ice water and reserve.
3. Cook broccoli in salted, boiling water for 3 minutes. Shock in ice water and reserve.
4. Combine pasta, black bean pieces, marinara sauce, broccoli, and peas in large mixing bowl.
5. Place even amounts into greased hotel pans.
6. Top each with 6 oz. parmesan cheese and 5 oz. dried oregano.
7. Bake in 350° F oven for 20 minutes until cheese is bubbling and internal temperature reads 165° F.
