- 1 chipotle pepper,
- ½ teaspoon adobo sauce from canned chipotle pepper
- 1 cup mayonnaise
- 2 ounces lime juice

- 2½ pounds smoked chicken breast,
- 2½ pounds jalapeno jack cheese,
- 2 cups roasted plum tomatoes,
- ½ cup fresh cilantro,
- 10 roasted garlic cloves,
- ¼ cup scallion,
- salt
- freshly ground pepper
- 80 Carr's® Table Water® Crackers with Cracked Pepper
- ½ cup barbecue sauce
- 40 slices avocado,
- fresh cilantro for garnish
Recipe Directions
Chipotle Sauce:1. Place chipotle pepper, adobo sauce, mayonnaise and lime juice in a food processor. Process until smooth.
Quesadillas:
1. Combine smoked chicken, cheese, tomatoes, cilantro, garlic and scallions. Season with salt and pepper to taste.
2. Place half of the crackers on a large baking sheet. Evenly top with chicken-cheese mixture. Drizzle with barbecue sauce. Top with remaining crackers and bake for 5 minutes or until cheese is melted. Garnish with barbecue sauce, avocado slices, fresh cilantro and serve.
