Ingredients
- 25 pounds MorningStar Farms® Spicy Black Bean Burgers
- 25 cups chopped onions
- 2 cups ground cumin
- 2 cups chili powder
- 1 cup garlic powder
- 3 cups chopped canned green chiles
- 2 cups chopped canned jalapeño peppers
- 3 gallons water
- 1 cup dried cilantro
- grated cheddar cheese
- sour cream
- additional chopped onion
Recipe Directions
1. Sauté patty pieces and chopped onions in large Dutch oven over high heat until patties are hot, stirring often and breaking up patties with back of spoon, about 10 minutes.2. Add cumin, chili powder, garlic powder, and chipotle chilies; sauté 3 minutes.
3. Mix in half of water and cilantro.
4. Reduce heat to medium-low. Cover partially and cook 25 minutes, adding more water by 1 cupful if chili becomes dry.
5. Season with salt and pepper.
NOTE: Can be made 1 day ahead. Cover; chill. Bring to simmer before continuing.
6. Ladle chili into bowls. Serve, passing cheese, sour cream and additional chopped onion separately.
