Asian Sun-Dried Cherry & Vegetable Lettuce Wraps

Gardenburger® Veggie Vegan Burgers Original
Servings: 10-12
Ingredients
- 1 ¼ pounds Gardenburger® Veggie Vegan
- 1 ounce canola oil,
- ½ ounce minced fresh ginger root
- 8 ounces carrots,
- 1 pound sun-dried or dark sweet cherries,
- 1 ounce rice vinegar
- 1 ounce teriyaki sauce
- ½ ounce honey
- 10 leaves bibb, iceberg or romaine lettuce
- 4 ounces green onion,
- 2 ounces almonds,
- 1 cup Chinese rice noodles
- 10 nests cooked bean thread noodles for garnish
Recipe Directions
1. Cook Gardenburger® Veggie Vegan Patties according to package instructions then dice.2. Heat ½ ounce oil in a large skillet over medium high heat. Add ginger, carrots and cherries and sauté for 3 minutes, then add rice vinegar, teriyaki, and honey. Bring to a simmer, then add Gardenburger® Veggie Vegan pieces.
3. Spoon desired amount of the Veggie/cherry mixture onto the center of each lettuce leaf; top with green onions, almonds and rice noodles and serve.
