MorningStar Farms® Buffalo Chimichurri Bowl

Ingredients
- 12 cups Brown rice, parboiled
- 5 qt. Water
- 3 Tbs. Garlic powder
- 2 Tbs. Thyme, dry
- 2 ea. Bay leaf
- 2 ½ oz. Red vinegar
- 2 oz. Lime juice
- 1 ½ cups Olive oil
- ½ cup Honey
- 4 Tbs. Oregano, dry
- 4 Tbs. Parsley, dry flakes
- 2 Tbs. Black pepper, ground
- 6 cups Cilantro, stemmed and chopped fresh
- 250 ea. Morningstar Farms® Vegan Buffalo Wings
Recipe Directions
1. Preheat oven to 350º F.2. Rinse the brown rice off under cold water.
3. Divide rice evenly between two 2” hotel pans. Add ½ of the water, 1.5 Tbs. of garlic powder, 1 Tbs. dried thyme, and 1 bay leaf to each pan, and mix to combine. Cover both pans tightly with plastic and foil and crimp the edges.
4. Steam or bake at 350º F for 40-45 min, until cooked through.
5. Fluff with a spoon and store hot at 145º F or above.
6. Make the chimichurri sauce by placing the red vinegar, lime juice, olive oil, honey, oregano, parsley, black pepper, and cilantro into a container and blending until smooth. Store chilled at 40º F or below.
7. Spread the Morningstar Farms® Vegan Buffalo Wings onto a pan and bake at 350º F until hot in the center, 14-16 min. Remove and hold hot at 145º F or above.
8. Scoop 1 cup cooked rice into a bowl or boat.
9. Top with 5 Morningstar Farms® Vegan Buffalo Wings.
10. Spoon 1 oz. of the chimichurri sauce on the top of the Morningstar Farms® Vegan Buffalo Wings or serve on the side in a cup, as desired.
