Chorizo Potato Tapas with Romesco Sauce

  • 3 ounces almonds
  • 2 garlic cloves
  • 2 red bell peppers,
  • 2 cups mayonnaise
  • 2 tablespoons red wine vinegar
  • salt
  • freshly ground pepper

  • 40 red potatoes,
  • 40 chorizo sausage,
  • 40 Keebler® Club® Original Crackers
  • salt
  • freshly ground pepper
  • chives for garnish

Recipe Directions

Romesco Sauce
1. Place the almonds and garlic in a food processor and process until nuts are finely ground. Add peppers, mayonnaise and vinegar; process until slightly blended. Season with salt and pepper to taste. Transfer sauce to a bowl, cover and refrigerate for at least 2 hours.

Chorizo Potatoes

1. Roast seasoned potatoes until tender. Remove and chill.
2. Broil the chorizo sausage until surface becomes crackly. Remove from broiler.
3. Top each cracker with two chorizo sausages and two potato slices. Drizzle with romesco sauce, garnish with fresh chopped chives and serve.
