Ingredients

Pickled Vegetables

  • 2 ea. Beefsteak tomato, ¼-in. slices
  • 1/2 ea. Red onion, thinly sliced
  • 1 ea. Serrano chili, thinly sliced
  • 1 cup Red wine vinegar
  • 1/2 cup Brown sugar
  • 1 tsp. Coriander seeds
  • 1 tsp. Cumin seeds
  • 1 tsp. Black mustard seeds
  • 2 Tbsp. Kosher salt

Raita

  • 1 cup Greek yogurt, plain
  • 1/4 ea. English cucumber, grated and drained
  • 2 Tbsp. Cilantro, chopped
  • 1 Tbsp. Kosher salt
  • 1 tsp. Cumin, ground

  • 2 Tbsp. Butter
  • 5 ea. Paneer, ½-in. slices
  • 2 Tbsp. Grapeseed oil

  • 5 ea. Challah bun
  • 2.5 oz. Spinach, raw, washed, dried

Recipe Directions

1. For the Pickled Vegetables: Combine tomatoes with onions and serrano chili in a bowl and set aside. Make pickling liquid by mixing the red wine vinegar, brown sugar, coriander, cumin, black mustard seed, and salt in a pot. Bring to a boil then turn off heat and allow to cool. Pour the pickling liquid over vegetables and set aside.
2. For the Raita: Combine yogurt, English cucumber, cilantro, salt, and cumin in a bowl and mix together, then set aside.
3. Add butter to a pan over medium/high heat, then sear paneer slices on both sides until crispy. Set aside.
4. In a pan over medium heat, add grapeseed oil and sauté the MorningStar Farms® Chipotle Black Bean Burger patties until crispy. In a second pan, toast the challah buns until lightly browned.
5. To Serve: Build the burger, spread 2 Tbs. of raita on both halves of the toasted bun then add ½ oz. of spinach on bottom bun, top with MorningStar Farms® Chipotle Black Bean Burger patty, paneer cheese, pickled vegetables and top with the other half of the bun.
