Ingredients
- 1 MorningStar Farms ® Royal Thai Curry Patty
- 2 Tablespoons Crumbled Feta
- 2 Cups of Fresh Kale & Spinach Mix
- 2 Cups of Fresh Shaved Brussel Sprouts
- 1 Tablespoon of Fresh Minced Garlic
- 2 Tablespoons Minced Onion, Seasoning
- 1 Tablespoon of Fresh Diced Jalapeño
- 2 Fresh Eggs
- 1 Teaspoon Lemon Juice
- 1 Teaspoon Ground Cumin
- 2 Tablespoons Olive Oil
- 1 Teaspoon ground Coriander
- 2 Tablespoons Butter Masala Simmer Sauce
Recipe Directions
1. Heat olive oil in a non-stick pan and cook 1 frozen MorningStar Farms® Royal Thai Curry Patty for 7 minutes until they reach 165ºF.Cut into 1/4 inch pieces and keep warm.
2. In the same pan, sauté kale/spinach mix, shaved Brussels sprouts, garlic, coriander, cumin, onion, jalapeño, and lemon juice
for 7 minutes until tender. Keep warm.
3. In a small non-stick pan, cook 2 eggs any style and keep warm.
4. For plating, use the large non-stick pan to serve with butter masala sauce, cooked eggs, and crumbled feta cheese
